Summary: | The invention discloses an extraction method of soybean proteins extracted from soybeans. The extraction method comprises the steps of soaking the soybeans in water and ethanol, then performing crushing and homogenizing, and then baking the homogenized soybeans to obtain soybean protein coarse powder; performing a mixing reaction on the soybean protein coarse powder, water, an alkaline solution and lipases, and performing ultrasonic centrifuging to obtain soybean protein fine powder; and finally performing sterilization so as to obtain the soybean proteins.
