Summary: | The invention relates to a desalination process in production of L-alanyl-L-glutamine, which comprises the following steps: mixing L-alanine and an alcohol, adding sulfuric acid to carry out catalyticreaction, adding a calcium salt and/or a calcium base to regulate the pH value of an obtained solution, and carrying out solid-liquid separation to obtain a solid salt and a filtrate; wherein the filtrate is concentrated to obtain the alcohol and free L-alanine ester; and adding the free L-alanine ester into a mixed solution of L-glutamine and acyltransferase, and carrying out a reaction so as toobtain L-alanyl-L-glutamine. According to the method, by reasonably configuring the preparation raw materials and technological parameters of L-alanyl-L-glutamine, efficient recovery of salt in the L-alanyl-L-glutamine preparation process is achieved, so that the subsequent wastewater treatment pressure is reduced, meanwhile, alcohol used in the process is recycled, and then efficient and environment-friendly preparation |
