According to the method, the red jujube is dried and heated in a vacuum environment, the jujube peel gets hot quickly in a short time under the action of high temperature, the cortex temperature is rapidly increased, the water under the cortex is vaporized, and the pressure is suddenly increased; the original pectin between the peel and the pulp is hydrolyzedand loses gelling property, and the link between the tissues is destroyed and leads to separation of the peel and the pulp; the peel is thus expanded and ruptured, and then is quickly removed by the action of high-speed cooling airflow.
