The invention relates to an environment-friendly polyurethane adhesive resistant to ethyl maltol. The environment-friendly polyurethane adhesive comprises a component A and a component B, wherein thecomponent A is an isocyanate-terminated (NCO-terminated) polyurethane prepolymer; the component B is a hydroxy-terminated (OH-terminated) polyhydroxy compound, and the component A is mixed with the component B in a mole ratio of NCO to OH of 1.8-2.5. The environment-friendly polyurethane adhesive is used for high-temperature-resistant soft packaging for cooking of foods, the adhesive can be resistant to ethyl maltol, and the situation is prevented that when the ethyl maltol permeates into the adhesive layer, layer separation, breakage and even efficacy loss of a packaging bag are caused, accordingly, the quality of the foods is affected, and health safety of the human body is harmed.
