Summary: | A hyperspectrum-based method for detecting triphosadenine and the bacterial count in a sausage is disclosed. The method includes (1) preparing ready-to-eat sausage samples with different storage days,and scanning the sausage samples with a hyperspectrum detecting instrument to obtain hyperspectrum images; (2) pretreating the hyperspectrum images by utilizing multivariate scatter correction, variable normalization and a derivative method; (3) selecting 10 characteristic wavebands by a regression coefficient method; (4) building a multiple linear regression model of sausage ATP and characteristic wavebands; and (5) subjecting the model in the step (4) to data reconstitution in reshape2 in the R language program, and then performing lattice to perform color surface representation on an ATP value calculated according to the model. The hyperspectrum-based method can achieve efficient detection of distribution of the inside ATP and the bacterial count and the detection accuracy is as high as 98.99%.
