The invention discloses a peeling machine of bamboo shoots. A peeling mechanism of sheaths of bamboo shoots is arranged on a machine frame, and consists of a first roller body and a second roller body; the first roller body and the second roller body are horizontally arranged in parallel; the upper part of the roller gap between the first roller body and the second roller body constitutes a material leading-in side of the bamboo shoots to be peeled; and the rotation direction of the first roller body and the rotation direction of the second roller body are opposite and the linear velocity of the roller surface at the position of the roller gap is downward.
