Summary: | The invention discloses a plant starch composition for preparing plant starch empty capsules and a preparation method of the plant starch composition. The composition is prepared from modified plant starch, a gelatinizing agent, a gelling agent, a disintegrating agent and water. According to the composition provided by the invention, the gelatinizing agent of the capsules is specifically compounded and one or more low-molecular-weight sugars are added; the disintegrating property of the capsules is improved through the mutual effect between the gelatinizing agent and a starch chain. Furthermore, a production process is simple, a one-pot method is adopted and unnecessary steps are omitted, so that resources are saved.
