Summary: | A polyphenol-rich brown sugar production technology includes the following steps that sugarcanes without sugarcane tips and sugarcane leaves serve as the raw material, are juiced and subjected to primary impurity removal, and a raw material solution is obtained; lime milk is added into the raw material solution to adjust the pH to be 7.0-7.5, and then the mixture is heated to 80-90 DEG C to obtain a heated raw material solution; a first-stage ceramic membrane with the aperture of 50-200 nm is used for filtering the heated raw material solution, and first-stage membrane clear juice and first-stage membrane concentrated juice are obtained; a second-stage membrane with the molecular weight cut-off being 1-5 kDa is used for filtering the first-stage membrane clear juice, and second-stage membrane clear juice and phenolic-substance-enriched second-stage membrane concentrated juice are obtained, wherein the second-stage membrane concentrated juice is used for producing polyphenol-rich brown sugar.
