An alkali liquor soaking method is used, the walnut dregs are added into the alkali liquor at a temperature of 90 DEG C or above and at a concentration of 0.1-0.2% to be soaked for 2-3 min, the soaked walnut dregs are washed, and skins and impurities of the walnut dregs are removed to obtain the peeled walnut dregs. The technology is simple, the peeling rate is high, and the peeled walnut dregs are less in nutritional loss. 核桃粕去皮处理工艺，属于核桃粕脱皮的技术领域，采用碱液浸泡法，将核桃粕加入到温度为90℃以上，浓度为0.1-0.2％的碱液中，浸泡2-3min，用水清洗，脱除核桃表皮和杂质，得到去皮的核桃粕。本工艺操作简单，去皮率高，去皮后的核桃粕营养损失小。
