Abstract | The invention belongs to the technical field of food processing and discloses a preparation process for a gingko nut-probiotics beverage. The preparation process comprises the steps: shelling gingko nuts, and then, boiling the shelled gingko nuts to remove inner peels; adding a certain ratio of pure water into the peeled gingko nuts, and carrying out crushing so as to prepare pulp; pouring the pulp into a homogenizer for homogenizing; carrying out biological enzymolysis; carrying out high-pressure sterilizing treatment; carrying out centrifugal filtration so as to obtain clarified gingko nut juice; carrying out probiotics fermentation, thereby obtaining a finished product. The preparation process is a bran-new technical process, the prepared gingko nut-probiotics beverage is stable in nature, rich in nutrition and unique in flavor, and the process is simple, environment-friendly and pollution-free and is low in cost, so that industrial production and popularization are facilitated.
