A low-temperature enzyme digestion, a high intensity pulsed electric field sterilization, a variable temperature fermentation, a graded probiotic inoculation, an ultrafiltration concentration and other technologies are used to prepare honey probiotic fermented concentrate which is appropriate in sweetness and sourness, and high in probiotic content and functional metabolite content, wherein the probiotic content is up to 8.12x10^12-9.58x10^12 CFU/ml and the concentrate is strong in probiotic property.
