Summary: | The invention discloses a method for extracting natural green pigment from chrysanthemum flowers. The method includes the steps that firstly, tap water with the weight 20-30 times that of chrysanthemum flowers is added into the dry chrysanthemum flowers, water temperature is 80-100 DEG C, pH is adjusted to be 7.5-8.5 with NaHCO3, digestion is performed for 20-40 min in a water bath of 90-95 DEG C, filtration is performed, and chrysanthemum flower residues are extracted again; secondly, filter liquor is combined and collected into a container, the container is opened, standing is performed for 40-70 h, acetic acid is added, pH is adjusted to be 3-4, standing is performed for 12-24 h, supernatant is abandoned, and lower-layer precipitate is obtained; thirdly, the lower-layer precipitate is subjected to a water bath of 90-95 DEG C, green pigment is obtained and dried at 50-70 DEG C, the green pigment is ground into fine powder, and the finished product green pigment from the chrysanthemum flowers is obtained.
