Summary:The invention discloses a milk product, which can prevent dental caries and has an improved flavor, and a production method thereof. The milk product is characterized in that erythritol partially or completely replaces the conventional sugar sources (cane sugar, lactose, fructose corn syrup, etc.). Erythritol can inhibit the growth of bacteria in oral cavity and formation of bacterial plaque, and is capable of reducing the happening rate of dental caries caused by residual cane sugar in oral cavity. Moreover, erythritol barely contains thermal energy, thus the thermal energy of milk product can be reduced, and at the same time, the bad aftertaste of high intensity sweetener can be covered. After dissolution, the filtration is not required, and thus the operation becomes easier during the production process. On the basis that the taste and nutritional value are not changed or are even improved, the thermal energy of milk product is reduced, moreover, the dental caries caused by milk product is well prevented, and an ideal healthy milk product is provided for the consumers.
