Summary:The invention relates to a preparation process of instant dried cyprinus carpio. The preparation process specifically comprises the following steps of: selecting raw material fish; treating the raw materials; slicing the material fish; detecting and deodorizing the fish sliced fish; rinsing the sliced fish; pickling the sliced fish; drying the sliced fish; roasting the sliced fish; grinding and stretching the roasted fish; packaging and sterilizing the roasted fish; and obtaining an instant dried fish product. According to the preparation process provided by the invention, in treatment of cyprinus carpio raw materials, the fishy smell of fish meat is reduced by virtue of a deodorizing method of using a deodorizing liquid firstly and then covering the fishy smell. By using a microwave roasting technology, the preparation process is short in time, good in product quality and high in efficiency, and is easily accepted by consumers. The instant dried cyprinus carpio is an instant food convenient to process and suitable for scaled production; the comprehensive competitiveness of the cyprinus carpio market is improved; and the instant dried cyprinus carpio is an effective path for increasing the additional value of cyprinus carpio.
