Summary: | The invention relates to a preparation method for tamarind polysaccharide gel. The method comprises the following steps: 1) purifying tamarind polysaccharide gum: adding water to dissolve and centrifuge, adding alcohol or isopropanol to flocculate and centrifuge, and separating to obtain purified tamarind polysaccharide gum; 2) adding water into the purified tamarind polysaccharide gum, then, adding sugar, and adding alcohol or an isopropanol aqueous solution to dissolve and refrigerate after heating and stirring, thereby obtaining the tamarind polysaccharide gel. According to the preparation method, alcohol or isopropanol is adopted to flocculate and purify the tamarind polysaccharide, so that heteropolysaccharide and a part of proteins can be removed, the rest of proteins remaining in the purified tamarind polysaccharide can be used as a gelling agent to form gel easily, and a solvent is not required to completely separate; the purified tamarind polysaccharide can form high-strength gel under relatively low aqueous solution concentration (1% to 2%); the integral preparation process flow is simple and efficient; and the process is green and environmentally-friendly. |
