The invention discloses a vehicle control method, a device and a vehicle. The control method comprises the following steps: a driving mode selected by a user is received; according to the driving mode selected by the user, a corresponding first characteristic curve or an MAP table is determined; the opening degree of an accelerator pedal is acquired, and according to the opening degree of the accelerator pedal and the first characteristic curve or the MAP table corresponding to the driving mode, a corresponding percentage is acquired; according to the percentage and a preset second characteristic curve, a target torque is acquired; and according to the target torque, the vehicle is controlled. According to the vehicle control method disclosed by the embodiment of the invention, in response to the driving mode selected by the user, uniqueness of the relationship between the percentage corresponding to the uniqueness and the target torque can be ensured, and control difficulty of an automatic gearbox is reduced.
