Summary: | The invention discloses a process for culturing a bacteria starter. The process comprises the following steps: (1) steaming materials, i.e. weighing bran, dissolving NaOH which is 0.6% of the weight of the bran or NaCO3 which is 0.8% of the weight of the bran in water which is 80% of the weight of the bran, mixing uniformly after the solution is added into the bran, and steaming the materials at normal pressure for 2 hours; (2) inoculating, i.e. spreading and cooling the bran which is taken out from the steamer to 45 DEG C below, inoculating 5% of seeds in trays after a conical flask is shaken uniformly, and mixing uniformly; and (3) loading into curtains and culturing: accumulating 9 kg of the materials in each curtain measured by dried bran for 3.5-4.5 hours, then spreading flatly, and culturing at the room temperature of 28-30 DEG C for 15-20 hours by controlling the product temperature to be not more than 40 DEG C to obtain the bacteria starter. The process disclosed by the invention is simple in flow, and the quality of the bacteria starter obtained according to the process for culturing the bacteria starter is high. |
