Summary: | The invention provides a saccharifying enzyme of which the amino acid sequence is SEQ ID NO:1. The optimum operative temperature of the saccharifying enzyme is 75 DEG C, and 80% or above of the enzyme activity can be kept in a range of 70-80 DEG C; and the optimum operative pH value is 6.0, and 70% or above of the enzyme activity can be kept in a pH value range of 4.0-7.0. The saccharifying enzyme can be widely used in production of glucose, and the DE value (reducing sugar value) is up to a maximum of 97% after 2.5h; and the saccharifying enzyme is high in specificity and can efficiently decompose alpha-1,4-glycosidic bonds, and the glucose content in the product is up to 90%. Besides, the saccharifying enzyme has favorable temperature tolerance, so that the saccharifying enzyme can be directly added to perform enzymolysis reaction without adding a cooling step after starch liquefaction, thereby saving work time and energy, saving more production cost and having wide market prospects. |
