Summary: | The invention discloses an extraction process of salted sea cucumbers. The extraction process comprises the following steps of: (1) cutting open fresh sea cucumbers and removing entrails of the sea cucumbers for later use; (2) stewing the sea cucumbers without the entrails at 100-110 DEG C under a vacuum condition for 10-20 minutes; (3) salting the stewed sea cucumbers with 10-15 parts of salt and 2-8 parts of accessories, removing liquid after 3-4 hours of salting, then adding 10-14 parts of salt and 3-7 parts of accessories into the sea cucumbers for salting for 3-4 hours, and then removing liquid; (4) roasting the sea cucumbers at 400 to 500 DEG C, thereby forming dehydrated roasted sea cucumbers; and (5) evenly mixing the roasted sea cucumbers with paste, thereby obtaining the finished product. The salted sea cucumbers produced by the method are good in taste and convenient to make, and are free from loss of nutrition. |
