Summary: | The invention discloses a boletus edulis dry powder with special flavour, which is prepared by adopting the following steps of homogenizing fresh boletus edulis, adjusting pH value of homogenate to 6.5-7.5 by using a phosphate solution, adding linoleic acid or plant oil containing the linoleic acid in the homogenate, then stirring for reaction for 30-90min at the temperature of 20-25 DEG C and a rotation speed of 50-200rpm to obtain boletus edulis seriflux, and then conducting low-temperature freeze drying to obtain the boletus edulis dry powder with special flavour.
