Summary: | The invention discloses a method for detecting lead in monosodium glutamate. The method comprises the steps of: preparation of a lead standard use solution and a matrix improver, preparation of a sample, drawing of a standard curve and the like. In the invention, by adopting a mixed solution of palladium nitrate and magnesium nitrate as the matrix improver, the ashing temperature for detecting the lead can reach 1100 DEG C, the interferences of coexist substances in the monosodium glutamate to a matrix can be effectively decreased, the lead is not made lost, and thus, the precision and accuracy for measurement are effectively increased; under a repetitive condition, a monosodium glutamate sample is measured six times to respective obtain the following measured data (mu g/kg): 445.93, 431,87, 428,45, 418,03, 425,92 and 434,67, wherein the average value of the measured data is 430.81 mu g/kg, the standard deviation per measurement s is 28,791 mu g/kg, and the standard deviation of the average value sa is 3.82 m |
