Summary: | The invention relates to a process for preparing gelatin, in particular to a process for producing high-viscosity cowhide alkaline gelatin by a batch and alkaline (BATALK) method. The process comprises pretreatment, rubber extraction, filtration, ion exchange, concentration, high temperature sterilization, drying, crushing, mixing, metal detection and formation of a finished product. The process is characterized in that: the pretreatment process is the BATALK method. By the process, the consumption of water and the consumption of sulfur acid can be reduced; and the gelatin obtained by the process has high viscosity. |
