Summary: | The invention relates to a method for preparing digestion-free rapid-fermenting yeast which is characterized by comprising the following steps: I, rice processing: rinsing rice, adding bleaching powder (Ca(OC1)2) solution for swashing and sterilizing, and grinding the rice into coarse powder; and II, material preparing and cultivating: adding water, raw material yellow wine yeast, raw wheat or ripe wheat, grinded coarse powder and sodium metabisulfite (Na2S2O5) solution in a yeast cylinder or a tank and evenly stirring, using active dried yeast as the seed and adding the dried yeast into the ingredient to cultivate into ripe yeast within 20-24 hours; in the cultivation process of ripe yeast, adding the sodium metabisulfite (Na2S2O5), the amount of which is the same with that during the steps of material preparing, to restrict growth of spoilage organism and prevent aging of saccharomycetes caused by excessive consumption of sugar so as to ensure the quality of yeast.
