Summary: | Process for preparing concentrates of carotenoids, wherein stable carotenoid concentrates are obtained by emulsifying a soln. of carotenoid in an aq. soln. of a protective colloid, the carotenoid soln. contg. vitamins A and/or E or their derivs. melting below 100 deg. and the soln. contng. no volatile organic solvent. The vitamin A deriv. used is the acetate, palmitate or propionate, and the vitamin E deriv is the acetate or palmitate. The carotenoid used is apocarotenal or an apocarotenic acid. Suitable protective colloids: Gelatine, gum arabic, dextrin, polyvinyl alcohol, pectin, starch, polyvinylpyrrolidone, Meocellulose, carboxymethylcellulose, gum tragacanth, alginates. (Underlined preferred). Other additions may be plasticisers such as saccharose, invert sugar, glucose, sorbite, mannite, and glycerol. The carotenoid content is 1-25% of the vitamin A and/or E content. Colouring of human and animal foods. |
