Summary: | The invention provides a process of incorporation of omega- 3 fatty acids such as EPA/DHA into polar lipid molecules present in lecithin, which consists of: (a) an enzymatic exchange reaction between the fatty acids present in the polar lipids of lecithin and the omega-3 fatty acids present in concentrated fish oil, to obtain an oil with a high content of polar lipids and omega-3 fatty acids and (b) a stage of concentration of the polar lipid content of the oil obtained in stage a, by supercritical fractionation or molecular distillation.
L'invention concerne un procédé d'incorporation d'acides gras oméga-3 tels que l'EPA/DHA dans des molécules lipidiques polaires présentes dans la lécithine, qui consiste : (a) en une réaction d'échange enzymatique entre les acides gras présents dans les lipides polaires de la lécithine et les acides gras oméga-3 présents dans de l'huile de poisson concentrée, pour obtenir une huile présentant une teneur élevée en lipides polaires et en acides gras oméga-3 et (b) en une étape de concentration des lipides polaires de l'huile obtenue à l'étape a, par fractionnement supercritique ou distillation moléculaire. |
