Provided herein are microbial oils and methods of making and using microbial oils with high levels of omega-3 fatty acids. Specifically, provided is a microbial oil comprising at least 85% total fatty acids, wherein the total fatty acids comprise at least 50% DHA. Also provided is a method of making a biomass comprising culturing an oil-producing microorganism in a culture medium comprising a fatty acid synthesis inhibitor, wherein the biomass comprises at least 500 mg/g oil. L'invention concerne des huiles microbiennes et des procédés de fabrication et d'utilisation d'huiles microbiennes ayant des taux élevés d'acides gras oméga-3. Plus précisément, l'invention concerne une huile microbienne comprenant au moins 85 % d'acides gras totaux, les acides gras totaux comprenant au moins 50 % de DHA. L'invention concerne également un procédé de fabrication d'une biomasse comprenant la culture d'un micro-organisme producteur d'huile dans un milieu de culture comprenant un inhibiteur de la synthèse d'acides gras, la biomasse comprenant au moins 500 mg/g d'huile.
