L'invention concerne des procédés de réduction de la viscosité d'une suspension épaisse d'amidon pendant le traitement de l'amidon par l'ajout d'un ou plusieurs tensioactifs et d'une ou plusieurs amylases. Selon certains modes de réalisation, la réduction inattendue de la viscosité de la suspension épaisse entraîne une augmentation surprenante de la récupération d'huile de maïs, une réduction de l'amidon résiduel et une vitesse de fermentation accrue.
