Summary:It is intended to provide milk products containing EPA and/or DHA originating in fish oil and being excellent in oxidation/emulsion stability. EPA and/or DHA-containing acidic milks being excellent in oxidation/emulsion stability. The term acidic milk means acidic soybean milk having been acidified by adding an acid, fermented soybean milk or acidic milk containing one of these products. These milk products contain EPA and/or DHA in the form of fish oil, preferably refined fish oil or fish oil containing EPA and/or DHA at a controlled level. The emulsification step (more particularly speaking, the emulsification step following the fermentation step in the process of producing fermented milk) is carried out in two stages. Foods containing any of the acid milks as described above.
