Summary: | Potato protein has high nutritional value, compared with other cereal proteins, it can make up for the low protein deficiencies of rice, wheat and other staple food raw materials, the market application potential is large. At present, China's potato processing mainly focuses on starch production, but the production process produces a large amount of protein in the wastewater. Efficient recovery of potato protein from wastewater can help increase China's food protein resources reserves, which has important social and economic value. This paper systematically reviews the advantages and disadvantages of various methods of potato protein extraction and their applications. The chemical method is widely used in practice, but the protein yield is low, and the potato protein recovered using the physical method has good quality and purity, but requires high equipment.
