Summary: | To many general wine drinkers and novice tasters, the detailed examination by a professional of a wine's appearance seems something of a pointless exercise. However, the appearance reveals much about a wine, giving indications as to style, quality and maturity, and may reveal some possible faults. This chapter examines the assessment of the appearance of a wine and considers the clarity, brightness, intensity, colour and other observations such as inter alia, legs/tears, deposit, petillance and bubbles. Many factors affect the colour of a wine, including climate and region of production, grape variety or varieties, grape ripeness, vinification techniques including any barrel ageing and maturity. Winemakers and marketing departments know that an appealing appearance is crucial to the drinker's perceptions of style and quality. The quality of the mousse is considered to be an essential part of the overall quality of sparkling wines. |
