Summary: | In this study, a novel method was established to evaluate the relative radical-scavenging speed (RRSP) of antioxidants by reacting them with 2,2-diphenyl-1-picrylhydrazyl (DPPH) and analyzing the results using High Performance Liquid Chromatography (HPLC). This approach enabled a systematic assessment of the RRSP of phenolics under varying pH conditions and allowed for comparison with the radical-scavenging number (RSN) of each antioxidant. These results confirmed that both RSN and RRSP varied depending on the pH of the reaction solution. Although not absolute, compounds with a higher RSN tended to exhibit faster RRSP. Furthermore, the number of hydroxyl groups in phenolic compounds was generally correlated with the RSN; however, the RRSP did not consistently increase with the number of hydroxyl groups, as it was influenced by the presence and position of the carboxylic acid group. The RRSP evaluation method established in this study is simple and allows for easy data interpretation, suggesting its potential for broad applications. KCI Citation Count: 0 |
