Summary:A questionnaire survey was conducted in 2001 on the liking for fish by children at day nurseries in 20 cities of Japan. About 70% of the children liked fish, this figure being similar to the results of similar surveys conducted in 1990 and 1996. A similar proportion (about 70%) of the children also liked meat, these likings for fish and meat being significantly correlated (r=0.246, p< 0.05). While the proportion of children who liked meat increased with age, the proportion of those who liked fish decreased with age. The liking of the children for fish was influenced by the food preferences of their mothers and fathers, the geographical location, their sex, the ability to cook fish meals by their mothers and the frequency of eating fish meals. The children's favorite cooking methods for fish were baked, raw and boiled with seasoning. 1990年, 1996年の調査に引き続き, 全国20地区, 1,966人の保育園児の保護者(母親が100%, 以下母親)を対象に魚介類およびその料理に対する幼児の嗜好について, 2001年にアンケート調査を行った.1) 幼児の魚介類に対する嗜好は, 「大好き」・「好き」は約70%を示した.同じ良質なたんぱく質源の肉類に対しても幼児の70%が好きであった.魚介類と肉類の嗜好は正の相関がみられた.2) 魚介類および肉類に対する嗜好を年齢別にみると, 魚介類では年齢とともに低下し, 肉類に対する嗜好は上昇する傾向であった.3) 幼児の嗜好に影響する主な項目は, 母親の嗜好, 父親の嗜好, 母親の魚料理の得意度, 魚介類が夕食に上がる頻度, 地域などであった.4) 幼児の好む魚介類の調理法は, 「焼く」「生」「煮る」で幼児の60%以上が好んでいた.「揚げる」調理法に対する好きな割合は, 5年前より低下した (p<0.05).5) 幼児の好む魚種は, えび, あさり, かに, しらす, さけ・ます, しらすであった.6) 幼児の好きな割合が高い伝承料理は, 貝類の汁物, 立田揚・唐揚, 照り焼き, 寿司, てんぷらで, 幼児の50%以上が好んだ.これらの中には, 食べたことがないと答えた料理も多かった.7) 魚介類に対する幼児の嗜好, 幼児の好む調理法, 魚種, 伝承料理には, 地域による違いがみられた.これから魚介類の摂取量を増やし, 魚離れを防ぐには, 母親が努力して, 魚介類を料理し, 食卓に上げることが重要になると考えた.
