Summary:(1) We tested antibiotic action of dehydroacylacetocarboxylic acid by the dilution method on several microorganisms, and found these compounds have bacteriostatic action against Acetobacter, Lactobacillus etc., but no action against molds and yeasts. (2) Dehydroacetocarboxylic acid inhibited those bacteria at 2 x 10-4, and dehydrobutyrylacetocarbo-xylic acid at 2x10-5. These compounds inhibited also the growth of Bacillus saprogenes Sake at the same dilution. (3) We attempted to use these compounds as the preventing substance of the infection of beer and brewery mash. In the fundamental experiments dehydrobutyrylacetocarboxylic acid could control the acidification by the growth of Lactobacillus and Acetobacter but it had no effect on yeasts in alcohol fermentation at 2× 10-5. (4) We determined the L. D. M. of acute toxicity of several dehydroacylaacetocarboxylic acids and dehydroacylacetic acids for mouse by oral administration (Table 7).
