Summary: | Hemoglobin is the red in our red blood cells. It’s a carrier for oxygen. Although a red blood cell takes only five seconds to go through the lung, it gets fully loaded with oxygen. Oxygen is not the only gas that attaches to hemoglobin; carbon monoxide is hazardous because it attaches strongly to hemoglobin. Some red meats and high-grade tuna are treated with carbon monoxide to enhance the red color. Although it sounds bad, the carbon-monoxide-treated meat is not a health hazard to people.
