Summary: | Heavy metals (HMs) pollution is a major threat to public health and the environment. Examples of these HMs include aluminum, arsenic, cadmium, copper, lead, mercury, nickel, and uranium, which can contaminate food and water, causing severe adverse effects on the human gastrointestinal tract (GIT) and central nervous system (CNS), more specifically in the liver and kidney. Coriander or cilantro leaves and seeds have been used as a chelating agent to detoxify HMs. This chapter covers the general characteristics of coriander (Coriandrum sativum). It explores their renal and hepatoprotective properties and their chemical contents that enable their uses in HMs toxicity reduction and detoxification. |
