Summary:It is observed the increasing increase in the consumption of processed, ultraprocessed and overweight foods in the population, for this reason the objective was to identify the relationship of food consumption according to the degree of processing, with gender, age and anthropometric data of adults and the elderly in a nutrition clinic in the interior of Rio Grande do Sul. This is a cross-sectional quantitative study with 178 individuals. Data on weight, height, waist circumference (CA) and neck circumference (CP) were used. To verify the food consumption, a 24-hour food recall was considered and the total caloric value and macronutrients were calculated using the DietWin Plus Nutrition Software version 2013. The average consumption of fresh, processed and ultraprocessed foods was 51, 9%, 19.6% and 28.4%, respectively. At increased CA and CP, overweight and obesity were verified in 87.6%, 84.3%, 15.7% and 64% of subjects, respectively. It was observed that the higher the individual's weight, the higher the percentage of lipids from processed foods (p = 0.007). Men presented significantly higher intakes of total calories (p = 0.001) from processed foods, and lipids (p = 0.022) from ultraprocessed foods. Other studies have shown an increase in the consumption of processed, ultraprocessed and overweight foods, which could result in health and quality of life of people. It was concluded that the majority of the individuals presented overweight and cardiovascular risk, the consumption of processed foods was related to increased CP, and individuals with overweight were related to higher consumption of lipids from processed foods. Observa-se o crescente aumento no consumo de alimentos processados, ultraprocessados e excesso de peso na populacao, por esse motivo objetivou-se identificar a relacao do consumo de alimentos de acordo com o grau de processamento, com genero, idade e dados antropometricos de adultos e idosos de um ambulatorio de nutricao do interior do Rio Grande do Sul. Trata-se de um estudo quantitativo transversal, com 178 individuos. Utilizaram-se dados de peso, altura, circunferencia abdominal (CA) e circunferencia do pescoco (CP). Para verificacao do consumo alimentar considerou-se um recordatorio alimentar de 24 horas, e calculou-se a quantidade calorica total e de macronutrientes utilizando o Software de Nutricao DietWin Plus versao 2013. O consumo medio de alimentos in natura, processados e ultraprocessados foi 51,9%, 19,6% e 28,4%, respectivamente. A CA e CP aumentadas, o sobrepeso e obesidade foram verificadas em 87,6%, 84,3%, 15,7% e 64% dos individuos, respectivamente. Percebeu-se que quanto maior o peso do individuo, maior o percentual de lipideos provenientes de alimentos processados (p=0,007). Os homens apresentaram consumo significativamente maior de calorias totais (p=0,001) provenientes de alimentos processados, e lipideos (p=0,022) de alimentos ultraprocessados. Outros estudos demonstraram um crescimento no consumo de alimentos processados, ultraprocessados e excesso de peso, podendo resultar em maleficios a saude e qualidade de vida das pessoas. Conclui-se que a maioria dos individuos apresentou excesso de peso e risco cardiovascular, o consumo de alimentos processados foi relacionado com CP aumentada e os individuos com excesso de peso foram relacionados com maior consumo de lipideos provenientes dos alimentos processados.
