Summary:Membrane technology has assumed a prominent position in the dairy industry. Ultrafiltration is widely used for the treatment of milk and whey. However, recent improvements in microfiltration membranes have opened up new application possibilities such as bacterial purification of raw milk at low temperatures and extraction of casein macromolecules: undenatured phosphocaseinate or individual caseins. These new separation possibilities can lead to the improvement of bacteriological and hygienic qualities of traditional products as well as new products with high added value for dietetic and therapeutic industries.
