Summary: | Pectin has no adverse effect on the absorption of iron, copper and zinc in 9 subjects fed a control diet for 3 weeks, followed by 3 weeks on an experimental diet to which 15 g of pectin were added daily. All diets were composed of conventional foods. Trace mineral contents of the diets and of urinary and fecal excretions were analyzed by atomic absorption spectrophotometry. No significant differences were observed between control and pectin diets with respect to mean daily intakes, excretions and balances of the 3 minerals. Thus, the value of pectin in the human diet is not restricted by impairment of mineral absorption, as had been previously postulated |
