Summary:Milk is considered one of the most complex foods, to present in its composition high in protein, vitamins, minerals, besides being an important source of calcium, being widely marketed. The objective of this study was to analyze the microbiological characteristics of pasteurized type C, marketed in Cariri Ceará, researching determining the most probable number (MPN) of coliforms at 45°C and Salmonella, according to the limits established by Normative Ruling. Cariri - 51 2002 20 samples from five municipalities in Ceará collected in duration, held in insulated containers and taken immediately to the Laboratory of Food Microbiology, Faculty of Technology CENTEC / FATEC were analyzed. Analysis of total and fecal coliforms and Salmonella spp were performed., Under the rules of APHA (American Public Health Association). The results showed that 70% of the samples were outside of the standards established by law as the coliform count at 45°C and absence of Salmonella spp. O leite é considerado um dos alimentos mais complexos, por apresentar em sua composição alto teor de proteínas, vitaminas, sais minerais, alem de ser importante fonte de cálcio, sendo amplamente comercializado. O objetivo deste trabalho foi analisar as características microbiológicas do leite pasteurizado tipo C, comercializado no Cariri Cearense, pesquisando a determinação do numero mais provável (NMP) de Coliformes a 45 ° C e Salmonella sp, de acordo com os limites estabelecidos pela Instrução Normativa n.51 de 2002. Foram analisadas 20 amostras provenientes de cinco municípios do interior do Ceará coletadas em prazo de validade, mantidas em recipientes isotérmicos e levadas imediatamente para o Laboratório de Microbiologia de Alimentos da Faculdade de Tecnologia CENTEC/FATEC – Cariri. Foram realizadas análises de coliformes totais e fecais e Salmonella spp., segundo as normas da APHA (American Public Health Association). Os resultados mostraram que 70% das amostras apresentaram- se fora dos padrões estabelecidos pela legislação vigente quanto a contagem de coliformes a 45°C e ausência de Salmonella spp.
