Abstract_FL | Ultra high pressure technology is one of the non-thermal sterilization technologies, and the application research in milk processing is a current hot topic. This article summarized the concept, development and characteristics of non-thermal technologies, especially the influence of high pressure technology on microbes, and the composition such as milk protein and milk fat in the milk processing. It also briefly analyzed the present situation of high pressure processing equipment and its application in dairy industry. The ultra high pressure technology has a certain theoretical basis and practical experience in the process of dairy processing, which is worth further research and commercialization application. The restricting factors and application foreground of high pressure technology in dairy industry were also prospected. |
