Purple tea with purplish,reddish or purplish-black bud is a unique type of tea plant germplasm resources rich in anthocyanins. In this article, the authors summarized the innovative utilization of purple tea germplasm, the biochemical and biophysical properties of tea products, the method of anthocyanin extraction, and the molecular pathways of anthocyanin biosynthesis. Furthermore, the authors expected in the future an extensive enrichment of purple tea germplasm, innovative development of purple tea products, and in-depth research into the genetics and metabology of purple tea.
