云南玉溪烟区KRK26在烘烤中的脂氧合酶比活力及其与质体色素降解的相关性
用分光光度法和相关性分析方法研究了云南玉溪烟区津巴布韦烤烟品种KRK26成熟中部叶片在3段式烘烤中的脂氧合酶比活力及其与质体色素降解速率的相关性。结果表明,KRK26脂氧合酶比活力在烘烤中表现为,低—高—低的趋势,在烘烤不同阶段的差异达到极显著水平,最高峰出现在变黄中期;脂氧合酶比活力与叶绿素a和叶绿素b的相对降解速率呈负相关,但与总叶绿素和类胡萝卜素的相对降解速率呈正相关,相关系数分别为0.014和0.644。因此,对于KRK26在烘烤中的质体色素降解,脂氧合酶可能主要作用于类胡萝卜素而不是叶绿素。本研究结果可为云南烟区KRK26香气品质的评价与调控及烘烤参数的优化提供参考。...
