酵母菌发酵半干罗非鱼挥发性成分分析

采用顶空-固相做萃取(HS—SPME)技术结合气相色谱-质谱(GC—MS)技术对未发酵半千罗非鱼和经酵母菌发酵半干罗非鱼中的挥发性物质进行研究,优化了固相微苇取的条件。结果显示:样品在500C条件下,采用聚二甲基硅氧烷/二乙烯基苯(PDMS/DVB)涂层的萃取头萃取50min,可得到较好谱图。通过气相色谱-质谱分析,在未发酵罗非鱼与酵母菌发酵罗非鱼中分别检测出74、59种挥发性物质。酵母发酵半干罗非鱼与未发酵半干罗非鱼的挥发性物质有显著差异,酵母发酵半干罗非鱼中苯乙醇相对含量明显高于未发酵半干罗非鱼。...

fermentated damp-dry tilapia by yeast; volatile Components; HS-SPME; GC-MS
The volatile eompounds of unfermented damp-dry tilapia and damp-dry tilapia fermentated by yeast were analyzed by means of Headspaee-solid phase microextraetion (HS-SPME) followed by gas chromatography-mass spectrometry (GC-MS). The optimal HS-SPME condition was conducted.The results showed that optimal ehromatograms were obtained when a sample at 50℃ for 50 rain was extracted using a fiber coated with polydimethylsiloxane/divinylbenzene (PDMS/DVB).Totally 74 volatile compounds were identified in unfermented damp-dry tilapia and 59 species in fermented damp-dry tilapia by yeast.There was a significant difference between the volatile compounds of unfermented damp-dry, tilapia and damp-dry tilapia fermentated by yeast.The relative content of phenethyl alcohol in fermented damp-dry tilapia by yeast was higher than in unfermented Damp-dry tilapia.
