气调条件下采后番木瓜硬度与相关酶活性研究

Fresh papayas were stored at atmosphere and modified atmosphere(8%O2+3%CO2+89%N2) at 13℃.The activities of polygalacturonase(PG),β-glucosidase,peroxidase(POD) and the changes of firmness were determined and analyzed.Then,fit the firmness by the activities of these enzymes.Results showed that he activities of these enzymes were controlled at 13℃ modified atmosphere.The firmness was affected by PG,β-glucosidase,POD.They can fit better the firmness in linear regression.
