Summary:Investigations of the growth of sucrose single crystals (P2 1) were conducted in pure solutions with 10% supersaturation at 22 and 50°C and in the presence of fructose and glucose. In the first 2–3 h, dissolution was observed at the positive end of the polar b-axis of the crystals; in the negative direction, however, the growth rate was initially higher than during the later growth phase. These effects can be influenced by a DC electric field and by adding the above-mentioned monosaccharides. Potential calculations supported that specific adsorption as well as the adsorption of foreign molecules occurred on various crystal faces.
