Summary:The cross-links between the α subunits in β gelatin were cleaved by incubation in vitro with the lathyrogen β-amino propionitrile at neural pH and 38°. The β 11 cross-link appeared to be more labile than that of β 12. The evidence obtained is consistent with a single cross-link between the α chains of β 12 gelatin. Acrylamide-gel electrophoresis has been used for the quantitative analysis of gelatin components and is compared with other analytical methods.
