Summary:The chemical composition and nutritional characteristics of flyingfish ( Exocoetidae spp.) were investigated. Flyingfish of mean length 26 cm and weight 145 g yielded approximately 38% of edible flesh. Amino acid analysis indicated that flyingfish protein is an excellent source of essential amino acids, and lipid analysis showed that docosahexaenoic acid is the most abundant fatty acid in flyingfish lipid.
