Summary:Food safety problem has become a serious problem all over the world particularly in China. There is a rapid increasing requirement for more accurate and sensitive detection method to cope the more subtle adulterations in food. This paper reviewed and linked the scattered research activity about the application and research conditions of fingerprinting method in food detection mainly in China. The classification, application domain, strengthens and limitations of fingerprinting technology were discussed. The results bring out the benefits of both professionals and scientists.
