The molecular structure shown in the picture is a triacylglycerol (TAG) molecule, which is an ester composed of three fatty acids linked to a glycerol molecule, and fatty acid molecules are similar in image to Chinese classical dragon boats. Reflection of the dragon boat on the river shows the fluidity of the water, symbolizes the separation of TAGs in chromatography (or capillary electrophoresis), which depends on the different carbon and double bone numbers and stereospecific position in the fatty acid branched chains. The profiling chromatogram of TAGs derived from high performance liquid chromatography‐mass spectrometry (HPLC‐MS) is similar to mountains.
