Summary:Milk can be designed to meet the requirements of consumers by modifying its composition by nutritional interventions or by transgenic method. Designer milk is tailored to provide both processing and health benefits to consumers. Altering the fatty acid profile, modifying the casein structure, milk containing nutraceuticals, replacement for infant formulas offers benefits in the area of processing. Increasing conjugated linoleic acid, omega fatty acids, less fat, less lactose, more proteins, less b lactoglobulin in milk offers health benefits to people. Thus designer milk holds big promises for the future. However, social and ethical issues regarding animal welfare, environmental impact, regulatory processes, food safety and labeling need to be addressed before designer milk is introduced for human consumption.
